Aimee rediscovered her childhood interest in baking by exploring how to use classic baking techniques to create vegan treats for herself. This pursuit led Aimee to deeply appreciate produce in a whole new way. Exploring the farmers markets of New York City as a vegan baker has helped inform her love for unique flavor profiles and pairings. Jove and Aimee discuss the deep importance she feels in taking into account seasonality when creating her one of a kind baked goods— even when this approach doesn’t align with a customer’s initial requests. Jove speaks about his own experience working with Aimee on a fall wedding, and why this approach first felt surprising, especially in an industry so often influenced by the “bridezilla complex.” Aimee’s approach is a breath of fresh air in an industry so often ruled by people pleasing.
